  1. In a large sauce pot, add your noodles, and all your chopped ingredients. Then add your wet ingredients, making sure your pasta is completely submerged in the broth and cover with the top.
  2. Over high heat, bring your pot to a boil – this should take about 3-4 minutes. After your pasta starts to boil, reduce the heat to medium and stir. Place the top back on, but continue to check on your pasta and stir it every 2 minutes until most of the liquid has evaporated.
  3. After 8 minutes check the tenderness of your pasta and reduce the heat to low for another minute. When the pasta is tender, serve immediately.
Recipe Notes

To crush your peanuts – you can use the side of your knife or bottom of a pan and press.

Since whole wheat pasta noodles aren’t as firm, I would not recommend using them for this recipe.

This dish should be served in one seating, I find it does not work well as leftovers.
